For me, the upgrade took forever, and seemed to go in an infinite loop showing an error message saying a virtual disk did not exist or was not available. Basically, an error dialog like this:
After some googling, it turns out that the answer lies here:
Basically, you need to delete all aliases that link to your parallels virtual disk that may reside in your Desktop, Applications or Dock folders.
